Amy’s House is situated in the heart of Claregalway, conveniently located close to the national school.

Open from 7.30am to 6pm Monday to Friday, Amy’s House caters for children between the ages of three months and 10 years.

The creche provides a breakfast club from 7.30am to include the school run. The ECCE scheme is provided daily, and Amy’s House also has a dedicated after-school service which has been a huge success and will commence again in September, under the guidance of Anita Igoe.

Amy’s House prides itself on quality food, prepared with care by Ann every day.

“We have a three-week menu plan which helps us with the planning of our food and also gives variety to the children. During the past weeks we have completely changed our menus and we have prepared new meals for September. Ann and the staff have worked hard in the past weeks at introducing new foods and tastes to the children. Some of the most popular ones have been Moroccan Lamb and meatballs with spaghetti. All the sauces are made with a combination of spices, herbs and stocks. Some of the recipes we are also using contain a few secret ingredients,” says proprietor Hazel Curran.


Meatballs and spaghetti

Serves four children

Ingredients:

  • 500g beef
  • 2 shallots finely chopped
  • 50g cheese
  • 1 egg beaten
  • 1tbsp olive oil
  • 200g spaghetti
  • Pepper to taste

Sauce:

  • 1tbsp olive oil
  • 1 grated courgette
  • 1 clove garlic
  • 1 grated carrot
  • 2tsps parsley
  • 1tsps tomato purée
  • dash vinegar
  • 1 can tomatoes
  • 3 beef tomatoes peeled and chopped

Method:

Mix meat, oregano, cheese and egg in a bowl. Bring a saucepan of water to the boil and add the spaghetti. Shape into meatballs. Heat oil in pan, fry the meatballs on a low heat until golden brown.  To make the sauce mix all remaining ingredients together and cook on a low heat for 5 mins. Add the sauce to the meatballs and serve on a bed of spaghetti.

Tip: Make the meatballs as big or as small as you want the day before and keep in the fridge overnight, this will help with cooking.
